Meatless Monday fell on a Tuesday this week — and this pasta came together with what was already in my kitchen. Whole grain pasta, zucchini, spinach, garbanzo and cannellini beans, organic tomato sauce, and pine nuts from the freezer. That’s the whole food formula: grain + veggie + protein. The rest is just creativity.
